BAKING QUEEN: Mocha Hazelnut Friands

This chocolate and coffee treat will make your tastebuds sing.

RECIPE: MOCHA HAZELNUT FRIANDS

Makes about 12

butter, for greasing
6 egg whites
120g hazelnut meal
180g unsalted butter, melted
230g icing sugar, sifted
80g plain flour
1 shot of good quality coffee
1 tbsp good quality cocoa powder

dash of warm water

Preheat oven to 180C and butter/grease friand tin or muffin tin and set aside. In a clean bowl, lightly beat egg whites with a hand whisk for about 2 minutes. Using a spatula, fold in hazelnut meal, melted butter, icing sugar and flour, until combined.

In a jug, mix together the shot of coffee and cocoa powder with the warm water. Pour mix into batter and fold through gently until mix is just combined.

Spoon mix evenly into friand tin and pop into oven and bake for 20-25 minutes or until friands are firm on top. Remove from oven and allow to cool for a couple of minutes before turning out.

Serve with your favourite cuppa or a big scoop of vanilla ice-cream.
